Eating Purple Cauliflower and Other Stuff

This winter I got a wee bit over ambitious and thought I could start another blog on eating plants; which was a fun idea, but completely unrealistic and insane given my current life stage. Homeschooling, blogging (sort-of) and now, suddenly, working part-time (at a paying job). For a few weeks I really questioned my sanity. Even though I like all those activities, I was not keeping up with many things – like this blog. Pretend you didn’t hear that. I’m supposed to encourage you…  so you can do more, be more, learn more, etc.

Thus the need for some recipe posts which I’m stealing from myself from my other “new” blog which now has become my “old” blog which will never see the light of day (at least for years) – now that I’ve regained my senses. Breathe…

This is to encourage you that even amidst the craziness of life that I’m sure at least some of you experience, it is possible to eat well, take care of your health and treat your body with love and respect.

Here’s to purple cauliflower and taking care of YOU even during crazy, busy, stressful times!


Baked Cauliflower with Garlic

Step 1

Mince 4-6 cloves garlic and chop cauliflower into bite sized pieces.

Nutrition tip: Chopping or pressing garlic first and letting it sit while preparing cauliflower will allow more cancer fighting compounds to form.

Step 2

Put cauliflower and garlic in plastic zip lock bag with about 2 tsp. olive oil and a sprinkle of sea salt (about 1/4 tsp). Seal bag and shake until it’s all mixed up.

Step 3

Put into baking dish

Step 4

Bake at 375 for 20-30 minutes, depending on how soft you want them. I like them when they’re just beginning to brown around edges.

    That’s super cool! How does it work?

    • When the garlic is pressed it starts a chemical reaction. Letting it sit allows a powerful cancer-fighting compound called allicin to form. If you toss it in a hot pan too soon, enzymes are destroyed and the reaction doesn’t have time to occur, and you can destroy most of garlic’s health benefits. But after 10 minutes, the allicin is formed and will not be destroyed with heat. I wrote about some other easy cooking/shopping tips to increase immunity here.
